Summer is officially here! 😊 And my garden is full of beautiful and delicious strawberries. I don't know about you, but I just love summer. I love taking my vitamin D every day, and I also love all the vitamins mother Earth has to offer from my garden. I am in love with strawberries and raspberries; and of course, I enjoy using them in delicious cakes, muffins, and smoothies. So today I will be sharing my recipe for these delicious strawberry muffins.
These strawberry muffins are very easy to make, and they have a very flavored and succulent taste. You can replace the strawberries with any fruits you want; but since strawberries are in season, why not take advantage? As these fruits have a high water content, they are heavy. When the muffins will be done, you will see that the strawberries will be left at the bottom of the muffins. I can assure you that this thing will not bother anyone!
The ingredients you need for 24 muffins are:
- 150 gr butter at room temperature
- 200 gr sugar
- 200 gr flour
- 1 tablespoon baking powder
- 125 ml natural yoghurt
- the peel and zest from 1 lemon
- 250 gr strawberries
- 3 eggs
Mix the butter and the sugar until the sugar is almost melted. Add the eggs, and then gradually add the lemon peel and zest, and the yogyurt. Mix everything using a mixer on medium speed for about 2 minutes.
Add the flour and the baking powder (Make sure you are using the baking powder correctly; after you add the baking powder sprinkle it with some lemon juice. I will make a tutorial article for this subject). After you composition is done, you can prepare the strawberries. Wash them well, and cut them in half or in quarters. If they are small, you can leave them as they are.
Add the strawberries to the composition and mingle well using a spatula or wooden spoon. At this point, do not use the mixer, because the strawberries will be crushed.
And now you can bake these delicious strawberry muffins. Put them in the oven for about 30 minutes, at medium temperature.
As you can see, this recipe is so easy, you can't fail with it. Everyone will love these strawberry muffins.
I didn't decorate them with anything because I really wanted to taste the delicious strawberry taste. But if you want, these strawberry muffins can be decorated with some powdered sugar, or even with a chocolate frosting, or lemon frosting.

My kids and I love strawberry muffins and these look easy enough to make. I will try them out this weekend. But maybe with canned strawberries. The fresh ones are hard to come by locally.
