Zucchini Waffles
We all know how important breakfast is. But, we don't always have the time to prepare for ourselves or our loved ones a healthy breakfast every morning. That's why I am presenting you this zucchini waffles recipe. It can be the perfect healthy breakfast for the entire family. It's easy and quick to make; you can even prepare the batter the night before, so in the morning your breakfast will be ready in no time.
For this recipe, you will need the following ingredients:
- 2 medium zucchinis (aprox. 600 gr)
- 4 eggs
- 120 ml milk
- 200 gr flour
- 1 pinch of baking powder
- 150 gr cheese
- 100 gr ham (bacon)
- salt and pepper
First, we have to prepare the zucchinis. Wash them well, and peel them off. Use a large grater to grate them. Add some salt (about 1/2 tablespoon) and leave it like that for 1 hour. After 1 hour, use a sieve to eliminate all the water from the zucchinis. You can even squeeze them with your hand to make sure all the water is eliminated.
Beat the eggs using a fork (just like you prepare an omelet) in a large bowl. Add the milk, salt, pepper (about 1/2 tablespoon of both) and mingle everything with a spatula. Add the flour and baking soda. Mix all the ingredients well.
Finally, add the grated cheese, zucchini, and ham. Mix everything together and your batter is done.
Now you can start making your zucchini waffles. I can't tell you exactly in how many minutes they're ready. It all depends on your waffle maker. I recommend you bake them until they turn into a beautiful browny color.
Let me tell you some tips about the ingredients. You can use any type of cheese you like. I chose Emmentaler cheese because it's our favorite. You can either use ham or bacon. If you have chicken leftovers or even turkey, you can use that instead of the ham.
