Pumpkin muffins



   Strange ingredient for a muffin, right? That was my first opinion too. After I tasted it, I realised that this strange ingredient make these muffins special: pumpkin. Actually, you don`t have to use the real pumpkin (those you try to scare your neighbour with during Haloween). For these muffins, you have to use the small one, named zucchini. You can find them in any grocery store or at the market.



   What you need is:
- 3 eggs
- 2 spoons flour
- 2 spoons sugar
- 1 teaspoons baking powder
- 50 gr butter
- 1 small zucchini.

   First, we handle the zucchini. You need 2 spoons of grated zucchini. Just peal it off and use the grater. Put in a sauce pan a  little sugar (about 1 spoon). Add the grated zucchini, and cook for about 10 minutes, until it becames soft. Keep in mind that you have to spin the composition during this time with a wooden spoon, so it doesn`t burn.

  
Mix the sugar with the butter, and the add the rest of the ingredients. When it`s almost done, and the zucchini, and make sure you mingle it well. 
  


   And now, just put the composition in your muffin tray, and let it bake for about 20 minutes. I know this might be a strange recipe, but trust me, you have to try it. Enjoy :)
