Carrot and cheese muffins

     I`m back with a new muffin recipe. This one`s "star" is a really
healthy vegetable: the carrot! Maybe it seems a little strange to make muffins with carrots, but trust me, it`s a great combination. These are not just simple muffins, they`re the muffins you want to make for your kids if they don`t like carrots in normal food (or even zucchini, because these muffins have that too). Just try them out, and you won`t be sorry. 

  The ingredients you need are:

- 130 ml milk
- 70 ml olive oil
- 2 teaspoons baking powder
- 2 eggs
- 240 gr flour
- 135 gr zucchini
- 135 gr carrots
- 100 gr cheddar grated cheese

    You need 135 gr grated zucchini (you have the instructions in
the zucchini muffins). And the carrots should also be grated.
    In a bowl, mix the flour with the baking powder. Add the zucchini, carrots, and half if the cheddar cheese. Season with salt and pepper, as much as you want. This is for everybody`s taste. 
  In another bowl mix the milk, oil, and eggs. After you mingled it all well, add the vegetable composition to it. Mix it all well. 
  Now, you can put the composition in your muffin tray, sprinkle the other half of the grated cheese on top and let them bake for about 25-30 minutes. 

Your carrot and cheese muffins are done. I recommend eating them with a hot cup of tea. It`s a very good combination. Enjoy :)
